So once I spent a few days touring local markets and visiting restaurants in Tuscany, it was time to head to the test kitchen to see what we could develop for Carino's.  My inspiration comes from lots of places, but the heart of the menu is inspired by my Italian experiences.  Deep in the heart of Sansepolcro, Italy lies Casa Buitoni, which has one of the nicest menu development kitchens that I have worked in.  Casa Buitoni is a very well known Eurpoean pasta company that has been in business for almost 200 years.  My hosts were Chef Rosario and Chef Riccardo, and together we came up with some great ideas to try out at Carino's.  Luckily, we had a full arsenal of equipment, tools and ingredients at our disposal.....
